Agnes' Peach Preserves

The very preserve from my kitchen table — sweet, golden and simple. The secret ingredient is patience and a thankful heart.

Agnes' Peach Preserves
Ingredients
  • 6 cups ripe peaches, peeled and sliced
  • 3 cups sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla
Method

Begin with peaches at the very peak of their sweetness — the sort that perfume the whole kitchen. Peel and slice them into a heavy-bottomed pan.

Add the sugar and lemon juice, and let it stand for an hour or so until the fruit weeps its juices. Then set it over a gentle heat, stirring often, and let it come slowly to a rolling boil.

Skim away any froth, stir in the vanilla, and cook until a little dropped onto a cold saucer wrinkles when you push it. Ladle into warm sterilised jars and seal at once.
